Can I recolor Nexus Appearance?

Yep. For a quick accent change, open nexus-appearance/shared/config.lua and edit Config.PrimaryColor. If you want to go further — fonts, backgrounds, border radius, the whole look — head into shared/theme.lua and point currentTheme at the theme you’d like to use (or build your own in there).
